Wine Making Notes
2011 Rubicon
We continue to refine the methods we use in crafting Rubicon in order to create the most elegant wine possible.  We used a new de-stemmer this vintage which treats the fruit more gently and causes less oxidation.  This resulted in better aromatic expression, allowing the fruit to show off its pure character.  This vintage was aged in 80% new oak barrels for 18 months before being bottled.
2012 CASK
Over the last few years, we’ve perfected our already refined winemaking methods, using smaller trays during harvest, a gentler destemmer that minimizes oxidation, and applying greater scrutiny during the fermentation process by evaluating individual blocks of fruit daily to optimize pump overs. These methods have greatly enhanced the quality of the 2012 vintage.
2012 RC Reserve Syrah
Over the last few years, we’ve refined our winemaking methods, using smaller boxes for picking, a new destemmer that is gentler on the fruit, thereby causing less oxidation, and we’re applying greater scrutiny during the fermentation process by evaluating individual blocks of fruit daily to determine which will benefit from pump overs. These improvements greatly enhanced the quality of the 2012 vintage, which is sure to go down in the books as one of the best vintages of the decade. The Syrah we harvested was very ripe and concentrated, showing great extraction and tremendous flavor complexity.
2012 Edizione Pennino
Over the last few years, we've refined our winemaking methods, using smaller boxes for picking, a new destemmer that is gentler on the fruit, thereby causing less oxidation, and we're applying greater scrutiny during the fermentation process by evaluating individual blocks of fruit daily to determine which will benefit from pump overs.  These improvements greatly enhanced the quality of the 2012 vintage, which is sure to go down in the books as one of the best vintages of the decade.  Steady, moderate temperatures lasted throughout the summer creating good conditions for ripening.
2013 Blancaneaux
Our Blancaneaux grapes were harvested by hand early morning in order to preserve the fruit's natural acidity and delicate fragrance.  Only a small percentage of the light press is used to maintain freshness, complexity and acidity from the fruit.  Cold-fermentation in stainless steel tanks was followed by eight months of sur lie aging to develop a rich, creamy palate.  With each subsequent vintage, Blancaneaux shows increasing palate density and great flavor complexity now that the vines are mature.
