The Vintage
The 2003 vintage was one in which winemakers were free to let nature do most of the work. Summer was relatively mild, which enabled the fruit to ripen at a judicious pace. The weather only became extreme in October when the California Indian summer arrived, the fog disappeared altogether, and the temperatures climbed near 90°. These conditions allowed the grapes to reach perfect ripeness so that we could be selective about harvesting during the first ten days of October.
Winemaking Notes
Cabernet Franc is a wonderfully aromatic varietal and great care is taken to extract its opulent character. The grapes were hand-sorted and crushed into small 5 to 6-ton fermentors and left to cold soak prior to fermentation. Once fermentation began, the temperature was kept low to maintain the delicate fragrances of allspice, clove, and raspberry. Before the must was fully dry, the pressed wine was separated from the free run juice and racked into French oak barrels for 20 months of cellaring.
Tasting Notes
The 2003 Estate Cabernet Franc demonstrates pure elegance. Bright red in color, with seductive aromas of red cherries, tobacco, and allspice, the flavors of ripe raspberry, blackberry, and sage are heightened by soft, supple tannins. Complexity will develop further with 5-10 years of cellaring.
